Melons are usually abundant and sweet now.  I developed a melon lassi recipe for a summer fund raiser.  It’s based on the classic Indian mango lassi.  If you are unfamiliar with lassi drink, it’s kind of like a creamy smoothie with fresh fruit, a bit of yogurt and sweetened with honey. Melon Lassi Recipe

 

Ingredients

  • 1 1/4 cups plain yogurt
  • 1/2 tsp lemon juice
  • 1/2 cup fresh melon flesh (cantaloupe, watermelon, honeydew melon, mango pulp, or other fruit can be used)
  • 1/3 cup cold water
  • 2 Tbsp honey
  • 9-10 standard ice cubes

Directions

  1. Blend all ingredients except for the ice cubes in a blender, until the honey is dissolved.
  2. Add ice cubes and blend until frothy
  3. Pour into 4 glasses and enjoy immediately!
