Roasted Winter Vegetables
This Roasted Winter Vegetables Recipe is great served hot or at room temperature.
Ingredients
- 1 1/8 large carrot
- 1 1/8 large russet potato
- 1 1/8 large yam
- 9/32 cup olive oil
- 9/32 tsp salt & pepper
- 9/32 tsp ground nutmeg
- 9/16 cup toasted pecans
- 9/32 cup maple syrup
Instructions
1. Pre-heat oven 350°F
2. Peel and cut carrot, potato, and yam into 1-inch pieces
3. In a large bowl, stir the olive oil, salt, pepper and nutmeg until combined. Add the vegetables and toss to coat.
4. Place the vegetables in a roasting pan and roast 25 minutes
5. Remove from oven increase oven temperature to 425°F
6. Stir in pecans and syrup and replace roasting pan in oven for a further 25-30 minutes.
